Hi! My name is Ann Diker and I am a Professor in the Nutrition Department at Metropolitan State University of Denver. I am a Registered Dietitian Nutritionist (RDN) with doctoral and masters degrees in Human Nutrition from Colorado State University and bachelors degrees in Accounting and Business from Briar Cliff University in Iowa. I have taught at Metropolitan State University of Denver since 2001. I also have experience in breast cancer research, qualitative evaluation, and nutrition education with low-income populations.

I have a bachelor’s, masters, and PhD all in Nutrition. I am also a registered dietitian (RD).

As your instructor, I believe it’s my job to provide resources, suggestions, practice and feedback to support your learning and it’s your job to set goals for achieving, to engage with class materials, and to do your best to achieve your goals. Ways I try to do my best for you include:
•Fostering a caring classroom community.
•Attempting to bring information to life through stories, activities and relevant projects.
•Following a challenging, stimulating, timely, and consistent class routine.

Ways you can do your best in my class include:
•Come to class and participate, or if an online student, be present in discussion and be in touch via e-mail.
•Support other students’ success. The best way to really learn something is to teach it to someone else.
•Develop a weekly nutrition study routine that allows you to absorb and enjoy the material rather than stress and cram.

Bio:

I joined the affiliated faculty member at MSUD in 2009. In my past professional life I have been a nutritional specialist, head dietitian and clinical dietitian at a major university hospital and a community teaching hospital. My favorite job has been as a mom.
I received by bachelors degree in medical dietetics from Utah State University and a Masters in Human Nutrition from Colorado State University; I am currently enrolled as a doctoral student at CSU.

Bio:

I am currently an Associate Professor in the Department of Nutrition. I started teaching at MSU Denver in the fall of 2014. Prior to that I taught at Weber State University in Ogden, UT for two years. I am a Registered Dietitian Nutritionist with a doctoral degree in Nutrition and a master's degree in Nutrition and Health Sciences from the University of Nebraska-Lincoln.

Nutrition is a fascinating field of science. I was drawn to the field after spending 3 years majoring in the fields of engineering and nursing. Spending time in the hospital during clinical rotations in nursing school provided me with an opportunity to see the ill effects of unhealthy lifestyle choices. The preventative nature of nutrition is what initially drew me to the field. The many intriguing aspects of nutrition (such as the influence of diet on gut bacteria) is what enticed me into graduate school and my current role as a professor.

Bio:

Philip Skaff has been teaching at Metropolitan State University of Denver since January 2009. He received a Bachelor’s degree in Biology and an Art Minor from MSU Denver in 1998. After graduating he spent years traveling, studying and working abroad. After spending almost a year in Africa he became interested in nutrition and decided to attend Colorado State University for a Master’s in Nutrition. In 2008 he completed a Registered Dietitian internship with the Florida Department of Education and shortly after he started teaching at MSU Denver. Philip’s philosophy on teaching and learning is that it should be fun, interactive, interesting, and challenging.

He’s originally from Colorado and lives the Colorado lifestyle. He loves the outdoors and is an avid cyclist for over 30 years. Teaching is his passion and he hopes to inspire his students to live a long and healthy lifestyle.

Bio:

My name is Jennifer Powell Weddig, PhD, RDN. I am a Registered Dietitian with a PhD from Colorado State University. This is my 16th year teaching at MSU Denver.

I love hiking, skiing, cooking, and doing about anything outdoors with my family and friends.

I teach Maternal and Child Nutrition, Introduction to Nutrition, and Medical Nutrition Therapy I and II.
