Professor/Chef David Beckwith, MAEd., has spent over 35 years in the Hospitality Industry dedicated to fresh high quality and seasonal sustainable ingredients. Chef Beckwith is committed to the support of all the local farming and ranching communities he has had the opportunity to support nationwide. From his early support of organic foods with Earthbound Farms & Natural Selection; research and development with Dole and Andy Boy Produce, Chef Beckwith has had the opportunity to truly comprehend the benefits of Farm to Table and the mantra of Slow Food.

Chef Beckwith maintains 15 years of dedicated service as a Culinary and Hospitality Educator. Teaching such hands on Lab Classes as Baking & Pastry, Global Cuisine, Healthy Cooking, Garde Manger and Food Science. Chef Beckwith most recently created and executed the first ever, Cooking with Beer class to be offered on a University campus with a working Brewery.

Chef Beckwith has been a contributor to the book “Slow Food”, authored by Michael James. Chef, can also be found as a contributor to the California Culinary Academy Series of Cookbooks & The Great Vegetarian Cookbook; By Kathleen DeVanna Fish.

Chef Beckwith in association with Starkey International, has enjoyed the great privilege with his knowledge base and skills to refine the healthy cooking techniques of those that serve the First Family, the Vice President and those at Annapolis, Norad and West Point.

Chef Beckwith is passionate about teaching and executing “good cooking” done honestly with natural and healthy flavors and committed to seasonality, regional and international authenticity.

Bio:

Dr. Gruhl’s current position is Full Professor.  Dr. Gruhl has been at Metropolitan State University of Denver since 2006.  He was the Chair for the Hotel and Hospitality Learning Center Task Force at Metro State and oversaw the building of the Marriott SpringHill Suites and 18,000 sq ft Hospitality Learning Center.   He was the Associate Chair from 2009-2012 and Chair from 2012-2014.  

Before joining the Hospitality, Tourism, and Events Management Department at Metro State, Dr. Gruhl was a Professor at Walnut Hill College in Philadelphia from 1998 – 2006.  His practical experience in the hotel and restaurant industry included:
 
·        Director of Food and Beverage at Trump Plaza Hotel and Casino in Atlantic City, NJ (600 employees)
·        Manager of Oscar’s Restaurant at the Waldorf=Astoria Hotel in New York City, NY (100 employees)
·        Manager of 525 Café and the Mini Bar Department at Hotel Inter-Continental in Chicago, IL.  (75 employees)
 
In addition, Professor Gruhl has held the following positions in his fifteen year hotel and restaurant career: General Manager (F&B), Director of Sales and Marketing, Sales Manager, Accounts Receivable, Accounts Payable, Night Audit, Front Desk, and Housekeeping.

Bio:

Shinyong (Shawn) Jung, Ph.D., joined the Metropolitan State University of Denver as an Assistant Professor of Events Management in 2017. Dr. Jung earned his Ph.D. in Hospitality Administration, MBA/MS in Hotel Administration from University of Nevada, Las Vegas, and a Bachelor’s degree in Tourism Management from Kyonggi University in South Korea.

Prior to joining MSU Denver, he obtained global industry experiences in the Hospitality and events industry with Shepard Exposition Services, UNLV Student Union & Event Services, Midas Convention Services in the U.S., and COEX Intercontinental Hotel in Seoul, South Korea.

Dr. Jung currently teaches Event Industry, Project planning, and Conventions and Tradeshows at MSU Denver. His previous teaching portfolio includes Introduction to the Convention Industry, Special Event Management, Event capstone, and Hospitality Facilities Management. A Special Event Management class he taught at UNLV appeared on shepardes.com/blog/consultative-approach-creates-amazing-ideas discussing his innovative hands-on classroom solution, where his students developed concepts and ideas, created an event website, and developed a presentation to showcase their plans to an actual association, named The Points West Show and School.

Dr. Jung’s research interests have been in the area of attendee/exhibitor satisfaction and loyalty, and sustainable operations in the various segments of events industry. He has published multiple refereed journal articles to top tier journals such as Tourism Management, Journal of Convention and Event Tourism, and An International Journal of Tourism and Hospitality Research (Anatolia). He received best paper award at the Academy of Global Hospitality and Tourism Conference, Seoul, South Korea.

Scott Kerkmans currently teaches several beer related classes within the Brewing Industry Operations program, which he oversees as faculty coordinator. In addition to his teaching responsibilities, he coordinates the beer industry programs as well as professional relations with the beer industry. As one of the first five Certified Cicerones in the world, Kerkmans is an expert voice in the world of craft beer and an advocate for beer education both at the professional level and in higher education. Kerkmans was a professional brewer for more than four years (most recently at Alaskan Brewing) and sold beer for a major beer distributor in over 80 on premises accounts. A Nationally Certified Beer Judge since 2005, Kerkmans serves as judge at the Great American Beer Festival annually. He helped found Draft Magazine and educated their editorial staff before being hired by Starwood Hotels as their Chief Beer Officer.

Kerkmans designed Starwood’s online training and education program for staff, used in more than 140 hotels, while also choosing beers used in Starwood’s hotel restaurants, hosted beer dinners and PR events around the world. Kerkmans is a leading professional educator for beer distributors, retailers, beer lovers and brewers with his company Beer Conscious Training, where he has created eLearning, Video and In-person professional development courses.

Faculty Profile of Cynthia Vannucci, Ph.D.

Dr. Cynthia Vannucci is a Full Professor and a former hospitality professional of 25 years in hotel operations, catering and conference services, hotel sales/marketing and event planning.  Her industry career primarily placed her in the Southwest portion of the US. 

The strength of her industry experience has been primarily in Hotel Sales and Marketing, where she served as Vice President of Sales for Choice Hotels International corporate owned properties, Regional Director of Sales for Ramada/Renaissance Hotels, and as an opening Director of Sales and Marketing for two hotels and one conference center.

Dr. Vannucci was honored to receive the meeting and event industry awards of:

  • 2001 Professional Convention Management Association (PCMA) Educator of the Year
  • 2004 Society of Government Meeting Professionals, Rocky Mtn. Chapter, Meeting Professional of the Year
  • 2008 PCMA Educator of the Year

Professor Vannucci holds a BS in Hotel Administration from the University of Nevada, Las Vegas, a Master in Business and Human Relations, Amber University, Dallas, TX, and Ph.D. from The Pennsylvania State University.

Dr. Vannucci’s research interests have been in the area of internships, issues of academic integrity in hospitality programs, and studying abroad experiences for hospitality students.  She has taught at the University of Prague, School of Economics, escorting over 280 MSU Denver, HTE students to study convention and exhibit planning in Prague, Czech Republic since 2011.

She is considered to be an excellent hospitality academic advisor because of her extensive work experience in hotels, restaurants, events, and tourism.  In addition, her advising sessions are friendly and student centric.  Students often comment on her thoroughness and working knowledge of university policies and her availability outside of office hours when needed.

Bio:

Dr. Michael Wray is a Professor of Restaurant Management at the Metropolitan State University of Denver. Prior to coming to Denver, Michael lived on the Eastern Shore of Maryland where he worked for several colleges teaching a variety of culinary and hospitality management classes. In addition to his collegiate teaching experience, Michael developed a love of fine cuisine through his work as a food and beverage director with Ramada Renaissance and Holiday Inn Hotels. His last property was the luxury Princess Royale resort hotel in Ocean City Maryland. His professional credentials include a Sommelier Diploma with the International Sommelier Guild, Certified Culinary Instructor, Certified Wine Specialist with the Society of Wine Educators, and Master Certified Food Service Executive.

As a Professor at Metro State, Michael has garnered a strong following of students that appreciate his interactive learning environment that fosters a love for food, wine, beer, and spirits in tandem. Locally, Michael has appeared numerous times in regional television and radio broadcasts, demonstrating his knowledge and creative abilities in food, wine and beer. Nationally he has appeared on www.wineliferadio.com, CNN, NBC National News, and Headlines News broadcasts discussing his innovative hands on classroom held at the Gold Medal winning Blue Moon Brewery at the Sand Lot in Denver. As a Chef and Sommelier, Dr. Wray is active in the food and beverage industry by consulting with companies in restaurant design, menu and recipe development. His food style reflects the best possibilities of cooking with beer, wine and spirits to maximize the components of beverages and food. He holds Bachelors in Nutrition and Foods from Virginia Tech, an MBA from Salisbury University and a PhD in Education Leadership at the University of Colorado, Denver.
