Affiliate professor Paula Thomas teaches food fundamentals and food production and service in the Hospitality, Tourism and Events Department at Metropolitan State University of Denver. Thomas also teaches food skills and nutrition education through Cooking Matters classes, which is part of the Share Our Strength No Kid Hungry Campaign.
Thomas is a native of Colombia, where she holds a business degree from the Universidad Santiago de Cali. She is a Certified Hospitality Professional through the American Hotel and Lodging Association as part of her training at the YMCA of the Rockies in 2002. She also holds an A.A. in culinary arts from The Art Institute of Colorado, a specialization in pastry arts at the Notter School of Pastry Arts, and a B.A. in journalism for food and wine from Metropolitan State University of Denver.
After receiving her B.A., Thomas began food blogging through her blog, Sweet Almond. Some of her writings and recipes have been featured in The Boulder Daily Camera, Examiner.com, Metrosphere and in nonprofit blog posts she crafts to help raise visibility.
Thomas has worked in some of Denver’s most recognized institutions in the pastry department, as a pastry assistant at Kevin Taylor’s restaurant group and the Inverness Hotel, pastry chef at Tante Louise, and executive pastry chef at the Denver Museum of Nature and Science. Thomas also owned a pastry business specializing in wedding cakes and dessert tables, landing in the top five on the Denver 7NEWS A List in 2011 and 2012, and named one of Colorado’s most talented bakers in 2011 by Colorado Brides Magazine.Edit this page
